Johnny’s Red Beans & Rice

1/2 LB Uncooked Bacon
4 Ribs of Celery
1 Large White Onion
2 TBS Minced Garlic
1/2 LB Ham
1 1/2 LBS Andouille Sausage
2 1/2 cups Chicken Stock
6 TBS Franks Hot Sauce
2 TBS Liquid Smoke
3 Bay Leaves
1 #10 Can Dark Red Kidney Beans
1 TBS Thyme
1 TBS Chili Powder
1 TBS Cayenne Pepper
1/2 TBS Basil
1/2 TBS Mustard Flour
1/2 TSP Nutmeg
1/2 TSP Cinnamon
1/2 TSP Marjoram
4 Cups White Rice

Red Beans & Rice Make-along Pro Tips

  • A #10 can of beans is equivalent to 109 ounces of beans
  • In advance take half of the beans and roughly mash them with a potato masher and set aside
  • Save/reserve all of the bean juice- you’ll use it in the recipe
  • Chop/Dice the bacon, onions, celery, ham, and sausage in advance
  • Have ALL of your ingredients pre-measured and ready to go by our cooking station. If you want to sound all Anthony Bourdain-esque and impress your friends this is called mise en place, of course to really sound like Bourdain you need to say this with a cocktail in your hand and insert an expletive somewhere
  • Pre-make your rice (Hint: Minute Rice works just fine, don’t waste a minute of valuable cocktail time making rice!) 
  • In advance combine all of the spices, so the spice mix is ready to go 
  • Have all of your tools (spoon or whatever you like to use to stir and a cocktail) ready to go at your cooking station- if you dazzled your friends in true Bourdain style with mise en place you already have your cocktail handy
  • When the livestream starts turn the burner to medium-high heat to preheat your pot
  • Get your serious BS game ready and start spewing it

3-4 Lemons (Juiced, Lemon Peel for Garnish)
3-4 Limes (Juiced)

Sugar* - 1 Cup
Eggs - (Only egg whites needed)

*To make simple syrup dissolve one cup sugar in one cup boiling water. When syrup cools transfer to a food safe jar or container and store in your refrigerator. 

Cocktail Demo Pro Tips

  • Go to Randall’s and get ample amount of supplies (ie. booze and mixers) - you don’t want to run short
  • Designate somebody to play bartender for each drink. You could have someone do them all, but it’s more fun if it’s someone different each time- share the learn…and the work
  • Have all of your tools (shaker, jigger, strainer, glassware) at the bar and ready
  • Have a pitcher or other vessel(s) close by to pour any extra from the shaker in once you’ve served the initial round- you don’t want to let a good drink go to waste-right!
  • Have your ingredients (booze, mixers, garnish, ice) ready to go at the bar - you don’t want to lose valuable moments of libation enjoyment because you weren’t ready for the party, so like a boy scout BE PREPARED!
  • Put out a tip jar - Hey, if somebody throws something in it you’ll take it- right and after four cocktail demos they might think they’re at a craft cocktail bar!
